U know for a very authentic kimchi they actually put shrimp powder to enhance the fermentation process and produce the 'umami' that gives kimchi the very seafood-kind-of taste...an interesting fact that i only got to know after years of fangirling kimchi thinking that it has always been just fermented veggie hahaha
