After teaching so many classes in different cities and countries, I realise many people are afraid of fermented foods. They're scared they will poison themselves with it. But this is an age-old method of preserving foods, adding nutrients and flavours to our food. And fermented foods are filled with probiotics, ie good bacteria that helps cultivate bio-diversity in our intestines. All this contribute to a healthy gut.
