I hope my Malaysian friends have gotten off to a mindful start with the re-introduction of CMCO. I’m glad that restaurants can stay open for dine-ins. Even with the 2-to-a-table limitations, it’s better in keeping their businesses alive than relying purely on pickups and takeaways. For those who are trying to save 💵, making food at home can also be a breeze.
Today I’m staying in with sammich mammich. Plain nori sheets lightly brushed with soy sauce and toasted for 3 minutes til crispy, layered with pan-fried eggplant, cucumber and homemade kimchi, sprinkled with vegan furikake. Assembled and ready in 10 mins. I’m in a mess trying eat this, but gosh, what a worthwhile mess it is. What are your speedy sandwich combos? I’d love to know!
