Jackfruit Seeds are naturally low in fat and high in B-complex vitamins and dietary fiber. They are also a relatively decent source of protein, making up 7 percent of its nutritional value. When peeled and boiled for 30 minutes, the seeds have the texture and taste of chestnut and if you’re hungry these will Fill. You. Up. I made this gorgeous Jackfruit Seed Curry with homemade vegetable stock, coconut milk, leftover walnut pulp from making nut milk, curry powder, cabbage, carrots, bell pepper, toasted mustard seeds and this gorgeous teal-coloured Green Chef Saucepan from @greenpanmy.
