I'm able to do this the vegan version because of the recent hype around OmniMeat 新膳肉 which is so versatile for anyone to replicate any traditional dish with 100% plant-based ingredients. It may not be as authentic like the _italiano_ way but I'm so stoked that I finally get to enjoy a simple yet crafty dish like this after many years of eating 'boring' pasta.
