Trim and peel asparagus spears and boil, blanch or grill them until they are cooked but not overdone.
Trim crusts off slices of bread and flatten the bread using a rolling pin or the back of a spoon. Spread an even and light layer of vegan mayo on the bread slices, sprinkle with garlic salt, cayenne pepper and lemon zest, place asparagus spears on the slices diagonally to form a diamond shape and roll the bread tightly around the spears. Sprinkle lemon zest on top and you're done!
