It's a retro Australian party appetiser. You cut the crust off sandwich bread slices, use a spoon or rolling pin to flatten the bread slices, spread vegan mayo thinly, sprinkle pepper and lemon zest and then arrange blanched asparagus spears diagonally on the slices so you start from a thin corner and roll towards the centre and end with the other thin corner on the opposite side. Press firmly so the bread will stick. I added alfalfa sprouts to my roll-ups for added vitamins and calcium.
