Radish Greens Pesto
(Oil-free, Nut-free)

I made a big batch of Kkakdugi (cubed radish kimchi) for this Sunday’s Fermentation Workshop at the @bwbfest so I had loads of radish greens left ie the green leaves from the top of the white radishes. I made a soup stock with some of it and also decided to make a pesto. Thank you @zenxinorganicfoodkl for the ingredients 🙏

Sharing my recipe with you 💚

3 cups radish greens
2 garlic cloves
2-inch block of homemade vegan cheese 🔜attend my demo on 18 August at the Malaysia Vegan Fest to learn how to make vegan cheese, register at link in bio
1/4 cup leftover brine from lacto-fermented vegetables
1-2 tablespoons miso paste
Pinch organic salt

Place all ingredients into a food processor and blend till smooth.
This turned out really yummy! I ate it with my rice. Mr Jazz Guitarist doesn’t really like fermented vegetables but he did try a bit of it.

I finally found a use for my vegan cheese which turned super hard coz I aged it for a loooooong time.
