HEIRLOOM TOMATO + ZUCCHINI LASAGNA
Ehm, this is my adaptation as I couldn’t find any zucchini even though I placed orders with Tesco numerous times. Had to go with red beet instead!) 💚
I ate this dish at @plantfoodandwine in Venice and finally understood why it’s such an iconic dish. It’s one of the very first raw recipes crafted by @matthewkenneycuisine nearly 18 years ago and every single raw food chef I know has made it.
In fact, my very first raw recipe I made was a raw lasagna recipe by @thisrawsomeveganlife way back in 2014. Watch my TEDx talk to hear my personal story if you haven’t done so already.
This one is part of my coursework at @foodfutureinstitute. Yes, amidst all the craziness of creating my own new online courses (tempeh making or nut-free cheese, anyone), trying out Malaysian recipes by @elinagives, being part of the newly launched 7-day raw food meal plan by 7 raw vegan chefs, conducting free daily uncooking IG/FB lives and a super exciting raw desserts project I’m working on - I decided to go back to school.
No regrets and totally loving all the assignments at FFI. In fact, sometimes I complete my assignments even before I take my morning shower. Yup, I’m THAT enthusiastic about it. And kids at home, don’t do that. The non-showering bit. 😁 🌱🌱🌱
