CENTER OF PLATE LESSON: BROCCOLI XO 🥦🥦🥦
My submission to @foodfutureinstitute:
“XO sauce is something very familiar for me as it’s available at every respected Chinese restaurant that I’ve been to in Kuala Lumpur. Funnily enough, I’ve never tried making it before.
This was really fun to make especially since I had the majority of ingredients with me. The only thing I substituted was the chilies - I used local Malaysian dried chillies instead of Ancho and chipotle.
Love the familiar taste of it all - yup, this XO sauce does pass off very much like the original versions I’ve had in KL before turning vegan.
Thank you for pushing me to discover how to make this ever present sauce in Chinese cuisine!”
🌟INSTRUCTOR FEEDBACK🌟 “This dish screams simplicity yet complex flavors throughout. With the diversity of the xo sauce as it can be the star assistant for any dish. The char on the broccoli counter balances the xo sauce and its intensity. The plate has contrast and delicate touches with intense flavor. Be sure to keep this one stocked up in the pantry for future usage. Superb job on this one!”
