Throwback to the time I made this for my @foodfutureinstitute assignment in September 2020.

My boyfriend said he wanted to cry with happiness when he saw this. I realised I've never actually made nachos as it seems like vegan junk food to me 😉

But this version is made from scratch, so it's actually really wholesome.

As I can't get masa harina, I made the raw vegan chips using corn & carrots instead as the main incredients.

I kept this oil-free and was still quite pleased with the consistency of the queso and creama without the oil 🙂

Didn't have time to make the guac so just used diced avocado instead.

The grocery list didn't include tomatoes but I'm glad that I managed to order some which arrived in the midst of me making the nachos.

The pickled jalapenos were really good. I'm wondering if I can make a raw vegan version by lacto-fermenting them instead 😉

I didn't have butternut squash so I substituted with pumpkin which worked really well.

Couldn't get cranberry beans either so just used black beans.

I'm totally making this again - thank you so much for the lesson!

Gorgeous work! I love the minimal plating here. You created such a nice colour contrast with the colours, such a great idea. All your additions sound great, and your garnishes are on point! Great plate choice, it makes your beautiful food pop up even more! I'm so glad your boyfriend and you enjoyed this!
