🥘 Was in the mood to make rendang! 🌙 This one is cooked coz I’m making it mostly for Mr Jazz Guitarist.
🌶️ I wanted to try out @chefdave_veganjourney’s Rendang recipe. He purposely made it a Sehijau Rendang 💚 but I didn’t have green chillies with me so I used red chillies ❤️ and it still tasted good for us.
I lowered the number of chillies as I was worried that it might be too spicy. 🔥 Also, I like my dishes with a bit of sauce 🥣 so I didn’t cook it down as long as he did. 🙏 Hope Chef Dave doesn’t mind and that I did justice to his recipe.
🛒 Went to 1U to find lion’s mane mushrooms 🍄 but couldn’t find them so we just used tempeh, tofu and mushrooms as the meat substitute instead. 💪
Mr Jazz Guitarist enjoyed the rendang a lot, so that’s what’s most important! 🥰

VEGAN RENDANG BLENDED INGREDIENTS 🧅🧄🌶️🌿 3 yellow onions 🧅 4 cloves garlic 🧄 2 inch ginger 🧡 2 inch galangal 2 inchi turmeric root 🧡 6 stalks lemongrass 🌿 5 red bird’s eye chillies 🔥 5 red chillies ❤️ OTHER INGREDIENTS ✨ 2 pieces asam keping 250g tempeh 🥜 400 g firm tofu 350 g oyster mushrooms 🍄 250ml coconut milk 🥥🥛 3 tablespoons grated coconut 🥥 - this was supposed to be kerisik but I forgot to make it 🤔 1 tablespoon Organicule date powder 🌴 2 teaspoons @mu.soysauce 🥢 1 tablespoon Miso paste 🥣 2 turmeric leaves from Helen’s garden 💛🌿 6 Kaffir lime leaves from Helen’s garden 🍃🌿 Pink peppercorns - supposed to be chilli flakes but I thought pink peppercorns looked prettier and would make the taste interesting
