US To Get 1st 'Vegan Butcher Shop'

A brother-sister team is on their way to opening what will be the first ‘vegan butcher shop’ in the US, selling everything from maple-glazed 'bacon' to 'chorizo' and Hawaiian 'ribs'.

The dream to build a brick and mortar ‘butcher shop’ for the Minneapolis siblings has come true thanks to a successful Kickstarter campaign, which recently surpassed its fundraising goal of $50,000 USD.

Instead of selling their products exclusively at the Minneapolis Farmer’s Market, siblings Aubry and Kale Walch who form The Herbivorous Butcher, will be opening what will be the first butcher shop dedicated exclusively to animal-friendly meat alternatives, with cold cases of vegan versions of smokey house ribs, Italian sausage, pepperoni, deli bologna, Mexican chorizo, breakfast sausage and Teriyaki jerky.

The base ingredient for the meatless meats is vital wheat gluten, followed by a string of spices and flavorings. The ribs, for instance, are flavored with ketchup, soy sauce, beet powder, and BBQ sauce.

The store will open in northeastern Minneapolis next spring and also allow the budding entrepreneurs to ship their products across the US.

Vegetarian butcher shops are slowly on the rise, with one of the first sprouting up in Europe with the opening of The Vegetarian Butcher in The Hague in 2010.

And while some media have reported that The Herbivorous Butcher would become the world’s first vegan butcher shop, in fact a Canadian entrepreneur may hold first rights to that title, after opening a vegan brick and mortar shop in Toronto earlier this summer.

At YamChops, ba-con is made from coconut flakes, beet patties made with beets, carrots and turnips and their ‘no pork pulled pork’ made with daikon and carrots.
