Training towards an open water swimming event next month, I have been putting an emphasis on getting good quality calories in my diet to keep up with the energy that I burn during my endurance training. This is a wholesome salad made with Roast Pumpkin, Walnuts, Sweet Peppers and Homemade Falafels over a bed of Coconut Yogurt stirred into Barley. Extraordinarily filling!
