Tangerine Sweet Potatoes

Secret Ingredients
  • 9 cups thinly sliced peeled sweet potatoes (about 2 1/2 pounds)
  • 8 lemon slices
  • 2/3 cup firmly packed brown sugar
  • 1 tablespoon grated tangerine peel or 1 tablespoon orange rind
  • 1/2 cup fresh tangerine juice or 1/2 cup orange juice
  • 2 tablespoons margarine, melted
  1. Preheat oven to 400º.
  2. Arrange sweet potatoes and lemon slices in a 13 × 9-inch baking dish coated with cooking spray.
  3. Combine remaining ingredients.
  4. Drizzle sugar mixture over potatoes; cover with foil.
  5. Bake at 400º for 35 minutes.
  6. Uncover, stir well.
  7. Bake an additional 30 minutes.
