Secret Ingredients
  • 1 1/2 lbs white pearl onions
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • Salt and pepper
  • Salt and pepper
  • 3/4 lb italian Fontina cheese, cut in cubes
  1. Preheat oven to 375 degrees F.
  2. Blanch onions in boiling, salted water for 30 seconds; drain.
  3. Slice off the root end and"peel" the onions by pressing them slightly between your fingers.
  4. Whisk together oil, vinegar, salt and pepper.
  5. Put onions in roasting pan, cover with oil mixture and toss to coat well.
  6. Bake until tender (about 25 minutes).
  7. Remove from oven and let cool in pan.
  8. Taste and adjust seasoning.
  9. To serve place 2 onions on cocoktail skewer with cheese cube.
