If there were a competition for salads, this one would be a definite winner. I chose a base of lettuce with 6 power and protein-packed mains of chickpea, edamame, beetroot, capsicum, mushrooms and pomegranate, and 2 toppings of cherry tomatoes and eggplant crisps (super yums!) Smothered it all in sesame and balsamic dressing. So good that my partner couldn't resist helping himself to my healthy green salad. The combination is absolutely delish, and quite filling too!
