In an effort to go low-carb and gluten-free on weekdays to improve my mental alertness and productivity, I decided to try my hand at making 'cauliflower rice'. Two large organic cauliflowers yielded enough cauliflower rice for around 8 meals. I steamed them until they were just cooked, without getting soggy or losing nutrients. They went well with fresh vegetables, but I think I know why they lead to weight loss now -- it takes so darn long to eat compared to normal rice and other starches! Starches are chewed up and absorbed quickly. Cauliflower needs chewing. And chewing. And yet more chewing. I was tired of eating within half an hour and lunch hour was up before I had gone through two-thirds of my bowl. Still, my energy levels have never felt higher!

Omg, just a small portion but took so long to chew! I've tried cauliflower fried rice before, it's very nice!

Oh i also tried cauliflower rice but it's quite a lot of work to shaved the cauliflowers. What do u use to make them into tiny bits ?
