To make the soup base, simply saute 1/3 cup of my vegan sambal (recipe on YouTube) and 2 tbsp curry powder until fragrant. Add 1/3 cup of santan/coconut milk and 1 cup of water. Lastly, season with 1/2 tbsp of vegetarian oyster sauce then bring to simmering. Ta-da, Chinese style curry mee is done!
Serve with mihun, eggplant, sprouts, ladyfinger and tofu puff as well as some extra sambal because why not? 🌶🔥
