Ingredients: makes 1 serving
1 pc kombu
1 cap dried shiitake mushroom
1 stalk of green onion, take only the root
2 cups water
1 tbsp oil
1/4 white onion
1 clove garlic
100g shimeiji mushrooms
1 tbsp miso
1 tsp almond butter/sesame paste
Salt to taste
1/4 cup plantbased milk (I used @snappeafood
1 serving ramen noodles, cooked (see my noodle recipe in my SUPERFOODS guide!)
1 tbsp raw sweet corn kernel
1 stalk green onion, green part chopped
1 tsp dried wakame, soaked
1 tsp Chili oil
A sprinkle of black sesame
In a pot, bring water to boiling. Add kombu, shiitake mushroom and spring onion root and simmer over low heat for 10 mins. Discard kombu and shiitake mushroom for other uses. Set the stock aside.
In a pan, heat up the oil and saute onion until translucent. Add garlic and saute until fragrant. Add shimeiji mushroom and saute for 1 minutes or so until softened. Pour in the stock and bring to simmer. Turn off the heat then add miso and almond butter stir until dissolved. Taste and season with salt if needed. Add plant based milk and stir well.
Serve immediately with noodles and top with sweet corn, green onion, wakame, chili oil and sesame seeds. Enjoy!
