I made vegan Korean "fish" cake soup (엄묵국) today! Soooo yummy!
It was winter when I traveled to Korea so I had lots of this popular Korean street food when I was there. Plus, you can find them almost everywhere.
Made the broth with dried kelp, dried shiitake mushrooms, radish, green onion roots and a pinch of mushroom seasoning. It was so good. Serve with the seasoning sauce I made with green chili, green onion, garlic, sesame oil and soy sauce.
