SUPERFOOD CHOCOLATE & CHEESE FUDGE by #RawChefYin.
I enjoyed making fudge so much yesterday I decided to make more today.
Figured that the pairing of chocolate and cheese would be perfect! This is a raw vegan fermented cashew cheese that I made recently for the cheese workshop that I taught. There is live probiotics in this cheese, yay!
This time I added in some cacao butter so that the fudge wouldn't melt so fast in this hot tropical weather in Malaysia. The consistency was perfect.
Here's the recipe, adapted from @plantlabculinary's original one:
Superfood Chocolate & Cheese Fudge
¼ cup cacao powder
1 tablespoon maca powder
Pinch of salt
¼ teaspoon spirulina
⅛ teaspoon cinnamon
2 tablespoons liquid sweetener of choice
1 tablespoon cacao butter, melted
2 tablespoons coconut oil, melted
💚Raw vegan fermented cashew cheese
💚Sprinkling of hemp hearts
1️⃣In a medium bowl, combine the dry ingredients. Add the cacao butter, coconut oil and sweetener and mix until combined.
2️⃣Place plastic wrap on the bottom of a square pan and place the chocolate fudge mixture in pan. Crumble in raw vegan cashew cheese. Sprinkle hemp hearts on top.
4️⃣Refrigerate for 1-2 hours. Once set, cut and serve.
