People keep telling me they can't go vegan because they don't want to give up their cheese. And I keep telling them there's dairy-free, vegan cheese :)
This one is vegan, but cooked. Used coconut milk to make it and agar-agar plus glutinous rice flour to thicken and firm it up. Still experimenting. I wanted something that's not made from cashew nuts or macadamia nuts because some of my students are allergic to nuts.
Also, many have requested for sliceable and meltable cheese so am testing out recipes to see what works best. This didn't firm up the first time so I had to heat it up again and then it worked.
Very delicious - I discovered a new flavouring that makes this vegan cheese even more addictive.
