My submission to @foodfutureinstitute:
“Made my blini raw vegan since I don't have a working stove top and used the dehydrator instead and changed the ingredients for it to work. The creme fraiche had an amazing texture. I wanted to keep it oil-free so I subbed with avocado instead for the fat.
Was a lot of fun working with the spherification. My caviar was a bit too big though so next time I should use a squeeze bottle with a smaller opening. This gives me tons of ideas for canapes - thank you so much for the lesson!“
