Oi naengguk, in Korean means cold cucumber soup. It is a well loved side dish soup especially during the hot summer seasons.

This soup is so easy, it does not even require any cooking. Yup, you've got that right!

The soup based is made of:
2 Tbsp sugar,
½ tsp salt,
½ tsp soup soy sauce
½ Tbsp sesame seeds

Main ingredients:
chopped Japanese cucumber
wakame (seaweed)

You can prepare this in advance, marinate & store in the fridge for 1-2 hours. Usually the cucumber will swell down & comes out with it's own juice. Then add on some (warm or cold, depends to your preference) water before you serve. Some people prefer to add in some vinegar or fish sauce, but I like it simple :)

Thanks for the easy recipe! I wish I got the time to pick up cooking again... Is that tomato slices in the middle of your soup?
