Cheesy Tofu Strips - Italian Style

Secret Ingredients
  • 1 1/2 cups spaghetti sauce, divided
  • 1/3 cup dried breadcrumbs (plain or Italian style)
  • 1/3 cup finely grated parmesan cheese
  • 14 ounces firm tofu (1 block) or 14 ounces extra firm tofu, drained (1 block)
  • 1 cup shredded reduced-fat mozzarella cheese or 1 cup regular mozzarella cheese
Directions
  1. Preheat oven to 325°F
  2. Coat a 9-by-13-inch baking dish with cooking spray.
  3. Spread 1/2 cup of spaghetti sauce evenly around bottom of dish.
  4. On a plate, combine bread crumbs and parmesan cheese. Set aside.
  5. Slice tofu in half lengthwise, then cut each half lengthwise into thirds.
  6. Cut each piece lengthwise again into halves to create 12 sticks.
  7. Coat each stick in crumb/cheese mixture, and place in baking dish.
  8. Cover the sticks with remaining spaghetti sauce and top with mozzarella. Bake 20 to 25 minutes.
