I woke up at 4.30 in the morning so figured I'd make one more Superfood Fudge for the @plantlabculinary challenge.

This one has turmeric because turmeric is used widely in Malay cuisine for ages and curcumin is now recognised as a superfood. I added figs as well because it gives the fudge some visual contrast. Also used carob in addition to cacao. Sharing the recipe with you so you can try it at home too!

RECIPE: Superfood Fudge - Figs & Turmeric

💚Dry Ingredients
¼ cup carob powder
1/4 cup cacao powder
1 tablespoon maca powder
Pinch of pink Himalayan salt
½ teaspoon spirulina
¼ teaspoon turmeric powder

💚Wet Ingredients
4 tablespoons liquid sweetener of choice
2 tablespoon cacao butter, melted
4 tablespoons coconut oil, melted

💚1 tablespoon cacao nibs
2 figs, sliced

METHOD:
Place dry in ingredients in a food processor and pulse till combined. Add the cacao butter, coconut oil and sweetener and pulse again till well-combined. Stir in 2 teaspoons of cacao nibs, set 1 teaspoon aside.

Place plastic wrap on the bottom of a 6” pan and place the chocolate fudge mixture in pan. Add on fig slices. Sprinkle 1 teaspoon of cacao nibs on top.

Refrigerate for 1-2 hours. Once set, cut and serve.
