Garlic And Red Potatoes En Papillote

Secret Ingredients
  • 16 (2 lb) red potatoes
  • 16 shallots , peeled
  • 16 garlic cloves , peeled
  • 2 teaspoons salt
  • 1 teaspoon fresh ground pepper
  • 1/2 cup garlic and herb butter (rosemary-garlic butter)
  1. Preheat oven to 350°F.
  2. Slice potatoes 1/4 inch thick.
  3. On each of eight 8 inch squares of aluminum foil, place 2 sliced potatoes, 2 shallots, and 2 cloves garlic.
  4. Dot each serving with 1 T. rosemary-garlic butter, add 1 T. water, 1/4 t. salt, pinch pepper.
  5. Seal packets tightly.
  6. Place packets on a baking sheet; bake 40 minutes.
  7. Remove from oven, carefully open packets, and slide contents onto plates.
  8. Serve at once.
