I wanted to use only natural food colouring, so I sliced fresh beetroot with a mandoline, dehydrated them overnight in my @excaliburdehydrator and ground the dehydrated beetroot slices into powder. This contributed to the lovely ruby red on these mooncakes. ❤️❤️❤️
Used @gulamelts which is 💯% natural, organic, low-GI and vegan to naturally sweeten them.
I tried to mimic the taste of egg for the "yolk", using nutritional yeast, black salt and used homemade turmeric powder for the colour. The filling is naturally sweetened with dates and @organiculesuperfoods cacao powder gives it a nice chocolately taste. Will still fine-tune the recipe tomorrow.
